This is my favorite pancake recipe. It’s filling and doesn’t bloat you because it’s made out of yuca a.k.a. cassava. They’re also very simple to make.
The key ingredient is:
Yuca/Cassava Flour: Cassava is a great source of energy. It contains Vitamin C, folate, magnesium, copper and fiber.
3/4 yuca flour
1/4 C avocado oil
1 TBS honey
1/2 TSP baking powder
1/4 TSP of sea salt
1/2 C almond milk
Prepare and Cook
Preheat skillet in medium to high heat.
Place all ingredients into a bowl.
Whisk all ingredients until smooth.
Use 1/3 C to pour out batter and cook.
When pancake looks less liquid flip over and let it cook for another minute or so.
