Avocado Banana Muffins

Ingredients:

  • 1 ripe avocado
  • 2 ripe medium bananas
  • 2 eggs
  • 2 Tbsp honey
  • 1tsp vanilla 
  • 2 C Gluten Free flour
  • 2 tsp baking powder
  • TBS avocado oil

Kitchen Supplies:

  • whisk
  • blender
  • muffin baking sheet

Prepare:

  1. Preheat oven to 355 degrees
  2. Place all ingredients except flour in blender and blend until smooth
  3. Once batter is smooth, add flour and blend

Cook:

  1. use 1/3 C to measure size of muffins
  2. Bake for 30 minutes

What do I eat this with?

  • Begin your meal with a green smoothie
  • Eat them as a part of your breakfast or as a midmorning snack
