Yuca/Cassava Flour Pancakes

This is my favorite pancake recipe. It’s filling and doesn’t bloat you because it’s made out of yuca a.k.a. cassava. They’re also very simple to make.

The key ingredient is:

Yuca/Cassava Flour: Cassava is a great source of energy. It contains Vitamin C, folate, magnesium, copper and fiber.

Ingredients:

  • 3/4 yuca flour

  • 1/4 C avocado oil

  • 1 TBS honey

  • 3 eggs

  • 1/2 TSP baking powder

  • 1/4 TSP of sea salt

  • 1/2 C almond milk

Prepare and Cook

  1. Preheat skillet in medium to high heat.

  2. Place all ingredients into a bowl.

  3. Whisk all ingredients until smooth.

  4. Use 1/3 C to pour out batter and cook.

  5. When pancake looks less liquid flip over and let it cook for another minute or so.
