Mushroom & Veggie Soup

Ingredients:

  • 1 Tablespoon of olive oil
  • 1/2 onion finely diced
  • 2 garlic cloves finely diced
  • 2 large carrots finely diced
  • 1 celery finely diced
  • 1 cup of leeks finely diced
  • 1 pound of mushrooms sliced
  • 1 teaspoon of sea salt
  • pinch of black pepper
  • 4 cups of vegetable stock
  • 1 cup of coconut milk
  • 1 1/2 Tbs. arrowroot starch 
  • 2 Tbs. tamari
  • 1 Tbs. apple cider
  • 2 Tbs. nutritional yeast

Procedure:

  • Heat the oil in a pot with the veggies (without mushrooms), garlic and onion and stir for about 5-6 minutes.
  • Add the mushrooms and stir for another 5 minutes
  • Add the vegetable stock and coconut milk
  • Add the salt, pepper, tamari, apple cider and nutritional yeast
  • Whisk the arrowroot starch until there are no lumps in your soup
  • Bring down heat to a simmer and let it cook for about 20 minutes
